Ingredients
- 1 (3.5-oz) pouch boil-in-bag quinoa (or use brown rice)
- 1 mango, chopped
- ¼ tsp chili powder
- Dash of cayenne pepper
- 1 cup shredded rotisserie chicken
- 1 avocado, sliced
- 3 Tbsp lime vinaigrette
Instructions
- Cook quinoa according to package directions.
- Sprinkle mango with chili powder and cayenne.
- Divide quinoa between 2 bowls. Top with chicken, avocado, and mango; drizzle with vinaigrette.
