Ingredients

  • 1 (3.5-oz) pouch boil-in-bag quinoa (or use brown rice)
  • 1 mango, chopped
  • ¼ tsp chili powder
  • Dash of cayenne pepper
  • 1 cup shredded rotisserie chicken
  • 1 avocado, sliced
  • 3 Tbsp lime vinaigrette

Instructions

  1. Cook quinoa according to package directions.
  2. Sprinkle mango with chili powder and cayenne.
  3. Divide quinoa between 2 bowls. Top with chicken, avocado, and mango; drizzle with vinaigrette.
