Ingredients
- 2 lb boneless, skinless chicken breasts, halved crosswise
- 3 Tbsp butter
- 1 (14.5-oz) can chicken broth
- ½ cup finely chopped onion
- 3 Tbsp Dijon mustard
- 2 Tbsp all-purpose flour
- ½ tsp dried thyme
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Melt butter in a large skillet over medium heat. Add chicken to skillet; cook 3 minutes per side or until browned.
- Whisk together broth, onion, mustard, flour, and thyme; pour over chicken. Cover, reduce heat, and simmer 10 minutes or until chicken is done and sauce is thickened.

- 2 cups long-grain white rice
- 1 head broccoli, cut into florets
- ¼ cup water
Side Dish Instructions
- Cook rice according to package directions.
- Place broccoli in an 11- x 7-inch microwavable dish; add water. Cover and microwave at HIGH 3 minutes or until crisp-tender; drain and season with salt and pepper to taste.
