Garlicky Spinach and Pasta
Tomato Bread
Ingredients
- 1 (16-oz) pkg cavatappi pasta (or use cellentani)
- ¼ cup butter
- 3 Tbsp minced garlic
- 2 (10-oz) pkg spinach
- ¼ tsp crushed red pepper
- 1½ cups shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving 1 cup pasta water.
- Meanwhile, melt butter in a large, deep skillet over medium heat. Add garlic; cook 30 seconds. Gradually stir in spinach until wilted. Season with desired amount of salt and crushed red pepper.
- Add pasta water, and gradually stir in cheese until melted. Toss with hot cooked pasta.
Side Dish Ingredients
- 1 (14-oz) loaf French bread or Italian bread, halved lengthwise
- 2 Tbsp olive oil
- 1 tomato, halved
Side Dish Instructions
- Preheat grill to medium heat. Drizzle cut sides of bread with oil. Grill bread, cut sides down, 2 to 3 minutes. Or bake bread, cut sides up, at 450°F for 2 to 3 minutes.
- Rub cut sides of tomato over crusty bread so tomato essence soaks into bread.
