Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into chunks (or use chicken thighs)
  • 1 (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano 
  • 1 Tbsp Creole seasoning

Instructions

  1. Season chicken lightly with salt and pepper. Sauté chicken and seasoning blend in hot oil in a large, deep skillet over medium-high heat 6 minutes.
  2. Add tomatoes and Creole seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened. Serve over Cheddar Grits recipe.

Side Dish Ingredients

  • 1½ cups quick-cooking grits
  • 2 Tbsp butter
  • 1 cup shredded Cheddar cheese
  • ¾ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook grits according to package directions. Stir in butter, cheese, salt, and pepper.
