Ground Turkey Kofta Bowls
Hummus and Naan Dippers

Ingredients
- 1½ lb ground turkey (or use ground chicken)
- ½ cup chopped onion
- ⅓ cup chopped fresh flat-leaf parsley
- 1 Tbsp Greek seasoning
- 2 (12-oz) pkg frozen riced cauliflower (or use microwavable rice)
- 1 (9-oz) pkg chopped romaine lettuce
- 1 English cucumber, sliced
- ¾ cup sliced roasted red peppers, drained
- 1 cup pitted kalamata olives
Instructions
- Preheat grill or grill pan to medium-high heat. Mix together turkey, onion, parsley, and seasoning in a large bowl using hands. Season lightly with salt and pepper.
- Shape chicken mixture onto 12 oblong patties; thread onto 12 metal or bamboo skewers (see Note). Coat patties with cooking spray. Grill 8 to 10 minutes or until done, turning occasionally.
- Cook cauliflower rice according to package directions. Divide lettuce and cauliflower rice among 6 bowls. Top with cucumber, roasted red peppers, olives, and kabobs. Sprinkle with more parsley, if desired.

- 1 (7.05-oz) pkg refrigerated naan dippers
