Bang Bang Chicken
Buttery Broccoli RiceIngredients
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
- ½ cup cornstarch
- 2 large eggs
- 1 cup buttermilk
- 2 cups panko breadcrumbs
- 1 (16-oz) bottle yum yum sauce
Instructions
- Preheat oven to 450°F; place a greased rimmed baking sheet in oven while preheating. Season chicken with salt.
- Place cornstarch in a shallow dish; whisk together eggs and buttermilk in a separate shallow dish. Place panko in a third shallow dish.
- Dredge chicken in cornstarch, then in egg mixture, and finally in panko, pressing firmly to adhere.
- Place chicken on preheated baking sheet; spray chicken heavily with olive oil cooking spray. Bake 15 to 20 minutes or until browned and crisp. Drizzle with yum yum sauce.
Side Dish Ingredients
- 2 (3.5-oz) pkg boil-in-bag white rice
- 2 (12-oz) pkg broccoli florets
- 3 Tbsp butter, cut into pieces
- 1 tsp salt
- 1 Tbsp finely minced garlic
Side Dish Instructions
- Cook rice and broccoli according to package directions. Chop large pieces of broccoli.
- Toss together rice, broccoli, butter, salt, and garlic in a bowl, stirring until butter melts.
