Bang Bang Chicken

Buttery Broccoli Rice

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • ½ cup cornstarch
  • 2 large eggs
  • 1 cup buttermilk
  • 2 cups panko breadcrumbs
  • 1 (16-oz) bottle yum yum sauce

Instructions

  1. Preheat oven to 450°F; place a greased rimmed baking sheet in oven while preheating. Season chicken with salt.
  2. Place cornstarch in a shallow dish; whisk together eggs and buttermilk in a separate shallow dish. Place panko in a third shallow dish.
  3. Dredge chicken in cornstarch, then in egg mixture, and finally in panko, pressing firmly to adhere.
  4. Place chicken on preheated baking sheet; spray chicken heavily with olive oil cooking spray. Bake 15 to 20 minutes or until browned and crisp. Drizzle with yum yum sauce.

  • 2 (3.5-oz) pkg boil-in-bag white rice
  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp butter, cut into pieces
  • 1 tsp salt
  • 1 Tbsp finely minced garlic

Side Dish Instructions

  1. Cook rice and broccoli according to package directions. Chop large pieces of broccoli.
  2. Toss together rice, broccoli, butter, salt, and garlic in a bowl, stirring until butter melts.
