Fragrant Couscous with Chicken
Toasted Pita Bread and Roasted Garlic Hummus
Ingredients
- 2 cups Israeli (pearl) couscous
- 1 cup golden raisins (or use dried apricots, chopped)
- Pinch of ground cinnamon
- 1 (8-oz) pkg chopped onion
- 1 Tbsp olive oil
- 3 cups chopped rotisserie chicken
- 4 green onions, chopped (or use ⅓ cup flat-leaf parsley)
- ½ cup refrigerated lemon vinaigrette
- Arugula (optional)
Instructions
- Cook couscous according to package directions, adding raisins during last 2 minutes of cooking. Stir in cinnamon; season with salt and pepper.
- Sauté onion in hot oil in a large skillet over medium-high heat until golden, 4 to 5 minutes. Add chicken; cook 1 minute or until heated.
- Toss together couscous, onion, chicken, green onions, and vinaigrette. Season again with salt and pepper to taste. Serve over arugula, if desired.

- 1 (10-oz) container roasted garlic hummus
Side Dish Instructions
- Spray pita lightly with olive oil cooking spray. Toast pita rounds in a hot skillet or 425°F oven 1 to 2 minutes per side. Tear in half, and serve with hummus.
