Fragrant Couscous with Chicken

Toasted Pita Bread and Roasted Garlic Hummus

Ingredients

  • 2 cups Israeli (pearl) couscous
  • 1 cup golden raisins (or use dried apricots, chopped)
  • Pinch of ground cinnamon
  • 1 (8-oz) pkg chopped onion
  • 1 Tbsp olive oil
  • 3 cups chopped rotisserie chicken
  • 4 green onions, chopped (or use ⅓ cup flat-leaf parsley)
  • ½ cup refrigerated lemon vinaigrette
  • Arugula (optional)

Instructions

  1. Cook couscous according to package directions, adding raisins during last 2 minutes of cooking. Stir in cinnamon; season with salt and pepper.
  2. Sauté onion in hot oil in a large skillet over medium-high heat until golden, 4 to 5 minutes. Add chicken; cook 1 minute or until heated.
  3. Toss together couscous, onion, chicken, green onions, and vinaigrette. Season again with salt and pepper to taste. Serve over arugula, if desired.

  • 3 pita bread rounds
  • 1 (10-oz) container roasted garlic hummus

Side Dish Instructions

  1. Spray pita lightly with olive oil cooking spray. Toast pita rounds in a hot skillet or 425°F oven 1 to 2 minutes per side. Tear in half, and serve with hummus.
