Parmesan Chicken
Green Olive SaladIngredients
- 3 (6-oz) boneless, skinless chicken breasts
- 6 Tbsp freshly grated Parmesan cheese
- 6 Tbsp panko breadcrumbs
- ½ tsp Italian seasoning
- ¼cup mayonnaise
Instructions
- Preheat oven to 425°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Place chicken in a greased 9-inch baking dish.
- Stir together cheese, panko, and Italian seasoning. Spread mayonnaise on chicken; press cheese mixture on top of chicken. Bake 20 minutes or until chicken is done.

- 1 (5-oz) pkg spinach
- 3 Tbsp crumbled feta cheese
- 3 Tbsp sliced green olives
- 3 Tbsp light olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
