Philly Cheesesteak Tacos
Ingredients
- ¾ lb flank steak
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp canola oil, divided
- 1 onion, sliced
- 1 red or green bell pepper, cut into strips
- 6 corn tortillas, heated
- 6 Tbsp shredded part-skim mozzarella cheese (or use provolone cheese)
Instructions
- Sprinkle steak with salt and pepper. Cook in ½ Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes; thinly slice across the grain.
- Cook onions and bell peppers in 1 Tbsp hot oil in same skillet over medium-high heat 8 minutes or until tender. Add beef to skillet, tossing to combine.
- Serve beef mixture in tortillas; sprinkle with cheese.
