Garlic-Butter Grilled Salmon

Warm Potato and Broccolini Salad

Ingredients

  • 1 (1½-lb) salmon fillet, patted dry
  • ¾ tsp kosher salt
  • ½ tsp pepper
  • ¼ cup butter, softened
  • 2 Tbsp finely chopped fresh parsley
  • 3 cloves garlic, minced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle fish with salt and pepper.
  2. Grill fish, skin sides down, 3 minutes. Turn fish over, and grill 2 minutes or until fish flakes with a fork. Combine butter, parsley, and garlic; spread over fish before serving.

Side Dish Ingredients

  • 1½ lb honey gold potatoes, quartered
  • ¼ cup water
  • 1½ lb Broccolini, cut into 2-inch pieces
  • ½ cup freshly grated Parmesan cheese
  • ½ cup olive oil vinaigrette
  • ¼ cup chopped fresh parsley
  • 2 tsp Italian seasoning
  • ½ tsp pepper

Side Dish Instructions

  1. Place potatoes and water in a microwave-safe bowl; cover with plastic wrap, and vent. Microwave at HIGH 6 minutes.
  2. Add Broccolini to potatoes; cover, and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
  3. Gently toss potato mixture with remaining ingredients in a large bowl.
