Garlic-Butter Grilled Salmon
Warm Potato and Broccolini Salad
Ingredients
- 1 (1½-lb) salmon fillet, patted dry
- ¾ tsp kosher salt
- ½ tsp pepper
- ¼ cup butter, softened
- 2 Tbsp finely chopped fresh parsley
- 3 cloves garlic, minced
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle fish with salt and pepper.
- Grill fish, skin sides down, 3 minutes. Turn fish over, and grill 2 minutes or until fish flakes with a fork. Combine butter, parsley, and garlic; spread over fish before serving.
Side Dish Ingredients
- 1½ lb honey gold potatoes, quartered
- ¼ cup water
- 1½ lb Broccolini, cut into 2-inch pieces
- ½ cup freshly grated Parmesan cheese
- ½ cup olive oil vinaigrette
- ¼ cup chopped fresh parsley
- 2 tsp Italian seasoning
- ½ tsp pepper
Side Dish Instructions
- Place potatoes and water in a microwave-safe bowl; cover with plastic wrap, and vent. Microwave at HIGH 6 minutes.
- Add Broccolini to potatoes; cover, and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
- Gently toss potato mixture with remaining ingredients in a large bowl.
