Pork Cacciatore
Fettuccine and Steamed BroccoliIngredients
- 2 lb boneless pork shoulder roast (or use boneless pork chops)
- ½ tsp pepper
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 (14.5-oz) can petite diced tomatoes
- 1 (24-oz) jar fire-roasted marinara sauce
- ½ cup white wine (or use gluten-free chicken broth)
- 2 tsp Italian seasoning
- 1½ cups shredded mozzarella cheese
Instructions
- Cut pork into 1-inch pieces; sprinkle pork with pepper.
- Place onion and bell pepper in a 5- to 7-quart slow cooker; top with pork.
- Stir together tomatoes, marinara sauce, wine, and Italian seasoning; pour over pork in cooker. Cover and cook on LOW 8 hours or until pork is done.
- Serve pork mixture over Fettuccine recipe; sprinkle with cheese.

- 1 (12-oz) pkg gluten-free fettuccine
- 2 Tbsp olive oil
- ½ tsp salt, divided
- 2 (12-oz) pkg broccoli florets
- ¼ tsp pepper
Side Dish Instructions
- Cook pasta according to package directions. Toss with oil and ¼ tsp salt.
- Steam broccoli according to package directions; sprinkle with ¼ tsp salt and pepper.
