Fettuccine and Steamed Broccoli

Ingredients

  • 2 lb boneless pork shoulder roast (or use boneless pork chops)
  • ½ tsp pepper
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 (14.5-oz) can petite diced tomatoes
  • 1 (24-oz) jar fire-roasted marinara sauce
  • ½ cup white wine (or use gluten-free chicken broth)
  • 2 tsp Italian seasoning
  • 1½ cups shredded mozzarella cheese

Instructions

  1. Cut pork into 1-inch pieces; sprinkle pork with pepper.
  2. Place onion and bell pepper in a 5- to 7-quart slow cooker; top with pork.
  3. Stir together tomatoes, marinara sauce, wine, and Italian seasoning; pour over pork in cooker. Cover and cook on LOW 8 hours or until pork is done.
  4. Serve pork mixture over Fettuccine recipe; sprinkle with cheese.

Side Dish Ingredients

  • 1 (12-oz) pkg gluten-free fettuccine
  • 2 Tbsp olive oil
  • ½ tsp salt, divided
  • 2 (12-oz) pkg broccoli florets
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook pasta according to package directions. Toss with oil and ¼ tsp salt.
  2. Steam broccoli according to package directions; sprinkle with ¼ tsp salt and pepper.
