Pesto Couscous Bowls
Ingredients
- ⅔ cup whole wheat Israeli (pearl) couscous
- ⅓ cup pesto
- ½ cup fresh mozzarella cheese pearls
- ¾ cup grape tomatoes, halved
- ¼ cup chopped fresh basil
- 1 Tbsp balsamic glaze
Instructions
- Cook couscous according to package directions; rinse under cold water to cool. Stir together couscous and pesto in a serving bowl.
- Add cheese, tomatoes, and basil; toss. Serve drizzled with balsamic glaze.
