Strawberry-Basil Soda

Ingredients

  • 1 (16-oz) pkg strawberries, hulled
  • 2 Tbsp balsamic vinegar
  • ¼ tsp salt
  • 1 cup water, divided
  • ½ cup sugar
  • 1 cup fresh basil leaves, torn
  • 2 (12-oz) bottles sparkling water

Instructions

  1. Preheat oven to 400°F. Toss strawberries, vinegar, and salt on a foil-lined rimmed baking sheet. Bake 20 minutes or until berries have softened.
  2. Transfer strawberries to a blender; add ½ cup water. Blend on high speed until smooth. Strain mixture through a sieve; discard solids. Chill strawberry mixture 15 to 20 minutes.
  3. Meanwhile, bring ½ cup water, sugar, and basil to a boil in a small saucepan over medium-high heat. Reduce heat to low, and simmer 5 minutes, stirring occasionally. Strain mixture through a sieve; discard solids, and chill basil syrup.
  4. Add strawberry mixture to basil simple syrup, and stir. Fill 4 old-fashioned glasses with ice. Spoon 3 Tbsp strawberry syrup into each glass; fill with sparkling water, and stir. Garnish with additional whole strawberries and fresh basil, if desired.
