French Lentil Salad

Ingredients

  • 1 (15.5-oz) can organic BPA-free lentils, drained and rinsed
  • 1 carrot, finely chopped
  • 1 clove garlic, minced
  • 2 Tbsp chopped fresh parsley
  • ¼ cup crumbled feta cheese
  • ½ tsp Dijon mustard
  • 1 Tbsp honey
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (5-oz) pkg organic baby spinach

Instructions

  1. Combine lentils, carrot, garlic, parsley, and cheese in a bowl.
  2. Whisk together mustard, honey, lemon juice, oil, salt, and pepper. Pour dressing over lentil mixture, and toss. Chill until ready to serve.
  3. Serve lentils over spinach.

Side Dish Ingredients

  • 1½ cups organic low-sodium vegetable broth
  • 1 (14.5-oz) can BPA-free no-salt-added crushed organic tomatoes
  • ¼ cup milk
  • 2 tsp whole wheat flour
  • 2 Tbsp chopped fresh basil
  • ⅛ tsp cayenne pepper
  • 2 Tbsp sour cream

Side Dish Instructions

  1. Bring broth and tomatoes to a simmer in a saucepan over medium heat.
  2. Whisk together milk and flour until blended; add to soup along with basil and cayenne pepper. Reduce heat to medium-low; cook, stirring constantly, until slightly thickened and thoroughly heated.
  3. Top each serving with a dollop of sour cream.
