French Lentil Salad
Homestyle Tomato SoupIngredients
- 1 (15.5-oz) can organic BPA-free lentils, drained and rinsed
- 1 carrot, finely chopped
- 1 clove garlic, minced
- 2 Tbsp chopped fresh parsley
- ¼ cup crumbled feta cheese
- ½ tsp Dijon mustard
- 1 Tbsp honey
- 2 Tbsp fresh lemon juice
- 2 Tbsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg organic baby spinach
Instructions
- Combine lentils, carrot, garlic, parsley, and cheese in a bowl.
- Whisk together mustard, honey, lemon juice, oil, salt, and pepper. Pour dressing over lentil mixture, and toss. Chill until ready to serve.
- Serve lentils over spinach.
Side Dish Ingredients
- 1½ cups organic low-sodium vegetable broth
- 1 (14.5-oz) can BPA-free no-salt-added crushed organic tomatoes
- ¼ cup milk
- 2 tsp whole wheat flour
- 2 Tbsp chopped fresh basil
- ⅛ tsp cayenne pepper
- 2 Tbsp sour cream
Side Dish Instructions
- Bring broth and tomatoes to a simmer in a saucepan over medium heat.
- Whisk together milk and flour until blended; add to soup along with basil and cayenne pepper. Reduce heat to medium-low; cook, stirring constantly, until slightly thickened and thoroughly heated.
- Top each serving with a dollop of sour cream.
