Avocado BLT Burgers
Zucchini Fries
Ingredients
- 2 slices nitrate-free bacon
- ½ lb 90% lean ground beef
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp olive-oil mayonnaise
- 2 tsp chopped fresh basil
- ½ tsp lemon zest
- ½ tsp fresh lemon juice
- 1 clove garlic, minced
- 2 hamburger buns (preferably whole wheat)
- 4 Bibb or Boston lettuce leaves
- 1 small organic tomato, cut into 4 slices
- 1 avocado, sliced
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain.
- Meanwhile, shape beef into 2 patties; sprinkle with salt and pepper.
- Preheat grill to medium-high heat or place a grill pan over medium-high heat; grill burgers 4 to 5 minutes per side or until no longer pink.
- Stir together mayonnaise, basil, lemon zest, lemon juice, and garlic; spread on buns.
- Serve burgers on buns with bacon, lettuce, tomato, and avocado.
Side Dish Ingredients
- 1 large egg
- 1½ Tbsp water
- 1 zucchini, cut into 3-inch sticks
- ⅓ cup whole wheat flour
- ½ cup panko breadcrumbs (preferably whole wheat)
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Whisk together egg and water in a shallow bowl.
- Dredge zucchini in flour, and dip in beaten egg; dredge in breadcrumbs, pressing gently to adhere. Place zucchini on a greased baking sheet.
- Bake 20 to 25 minutes or until browned and crisp. Sprinkle with salt and pepper while hot.
