Marinara Oven-Fried Chicken

Ingredients

  • ¾ lb chicken cutlets
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 large eggs, lightly beaten
  • ⅓ cup almond flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 Tbsp avocado oil
  • 1 cup natural marinara sauce

Instructions

  1. Preheat oven to 450°F. Sprinkle chicken with salt and pepper. Place eggs in a shallow dish. Combine flour, onion powder, garlic powder, and thyme in a second shallow dish.
  2. Dip chicken in egg; dredge in flour mixture. Place on a rack in a roasting pan rubbed with oil.
  3. Bake 15 minutes or until chicken is done and lightly browned.
  4. Microwave marinara sauce in a microwave-safe bowl at HIGH 2 minutes or until thoroughly heated. Serve chicken with marinara sauce.

Side Dish Ingredients

  • 1 clove garlic, minced
  • 1 Tbsp avocado oil
  • 1 zucchini, cut into ½-inch half-moons
  • 1 (8-oz) pkg sliced mushrooms
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 30 seconds. Add zucchini, mushrooms, salt, and pepper. Cook 6 to 8 minutes or just until vegetables are tender and browned, stirring occasionally.
