Marinara Oven-Fried Chicken
Garlicky Zucchini and Mushrooms
Ingredients
- ¾ lb chicken cutlets
- ¼ tsp salt
- ¼ tsp pepper
- 2 large eggs, lightly beaten
- ⅓ cup almond flour
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 Tbsp avocado oil
- 1 cup natural marinara sauce
Instructions
- Preheat oven to 450°F. Sprinkle chicken with salt and pepper. Place eggs in a shallow dish. Combine flour, onion powder, garlic powder, and thyme in a second shallow dish.
- Dip chicken in egg; dredge in flour mixture. Place on a rack in a roasting pan rubbed with oil.
- Bake 15 minutes or until chicken is done and lightly browned.
- Microwave marinara sauce in a microwave-safe bowl at HIGH 2 minutes or until thoroughly heated. Serve chicken with marinara sauce.
Side Dish Ingredients
- 1 clove garlic, minced
- 1 Tbsp avocado oil
- 1 zucchini, cut into ½-inch half-moons
- 1 (8-oz) pkg sliced mushrooms
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium heat 30 seconds. Add zucchini, mushrooms, salt, and pepper. Cook 6 to 8 minutes or just until vegetables are tender and browned, stirring occasionally.
