One-Dish Dinner
Lamb Kofta Bowls
Ingredients
- 1 lb ground lamb (or use ground beef)
- 2 tsp garam masala
- 2 cloves garlic, minced
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 (20-oz) pkg frozen riced cauliflower
- 1 Tbsp olive oil
- ¼ cup chopped fresh mint, divided
- ½ cup plain whole milk Greek yogurt
- ½ English cucumber, chopped
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- 1⅓ cups grape tomatoes, halved
- 4 cups baby spinach
- 3 Tbsp red wine vinaigrette
Instructions
- Preheat broiler. Combine lamb, garam masala, garlic, ¼ tsp salt, and ¼ tsp pepper in a bowl; shape into 8 oblong meatballs.
- Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done, turning after 5 minutes.
- Meanwhile, cook cauliflower according to package directions; stir in oil and 2 Tbsp mint.
- Stir together yogurt, cucumber, 2 Tbsp mint, lemon zest, lemon juice, ¼ tsp salt, and ¼ tsp pepper in a small bowl. Combine spinach and vinaigrette in a second bowl; toss.
- Divide cauliflower rice and spinach among 4 bowls; top with meatballs, tomatoes, and yogurt sauce.
