Lamb Kofta Bowls

Ingredients

  • 1 lb ground lamb (or use ground beef)
  • 2 tsp garam masala
  • 2 cloves garlic, minced
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 (20-oz) pkg frozen riced cauliflower
  • 1 Tbsp olive oil
  • ¼ cup chopped fresh mint, divided
  • ½ cup plain whole milk Greek yogurt
  • ½ English cucumber, chopped
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • 1⅓ cups grape tomatoes, halved
  • 4 cups baby spinach
  • 3 Tbsp red wine vinaigrette

Instructions

  1. Preheat broiler. Combine lamb, garam masala, garlic, ¼ tsp salt, and ¼ tsp pepper in a bowl; shape into 8 oblong meatballs.
  2. Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done, turning after 5 minutes.
  3. Meanwhile, cook cauliflower according to package directions; stir in oil and 2 Tbsp mint.
  4. Stir together yogurt, cucumber, 2 Tbsp mint, lemon zest, lemon juice, ¼ tsp salt, and ¼ tsp pepper in a small bowl. Combine spinach and vinaigrette in a second bowl; toss.
  5. Divide cauliflower rice and spinach among 4 bowls; top with meatballs, tomatoes, and yogurt sauce.
