Lemon-Cream Cheese Stuffed French Toast

Ingredients

  • ½ cup ⅓-less-fat cream cheese, softened
  • 1 Tbsp lemon zest
  • 8 (1-oz) slices whole-grain bread
  • ½ cup 1% low-fat milk
  • ½ tsp sugar
  • ¼ tsp vanilla extract
  • 2 large eggs

Instructions

  1. Stir together cream cheese and lemon zest until well blended. Spread over one side of 4 bread slices.
  2. Top with 4 slices bread, pressing gently around the edges to seal.
  3. Whisk together milk, sugar, vanilla, and eggs in a shallow dish until blended. Dip sandwiches in egg mixture; soak 30 seconds per side.
  4. Heat a large griddle or large nonstick skillet coated with cooking spray over medium-high heat.
  5. Add sandwiches to skillet; cook 2 minutes per side or until lightly browned. Top with Mango-Coconut Topping recipe.

Side Dish Ingredients

  • 1 mango, cubed
  • 1½ Tbsp fresh orange juice
  • 1 Tbsp honey
  • 2 Tbsp sweetened flaked coconut

Side Dish Instructions

  1. Combine mango, orange juice, and honey; toss. Gently stir in coconut.
