Lemon-Cream Cheese Stuffed French Toast

Ingredients
- ½ cup ⅓-less-fat cream cheese, softened
- 1 Tbsp lemon zest
- 8 (1-oz) slices whole-grain bread
- ½ cup 1% low-fat milk
- ½ tsp sugar
- ¼ tsp vanilla extract
- 2 large eggs
Instructions
- Stir together cream cheese and lemon zest until well blended. Spread over one side of 4 bread slices.
- Top with 4 slices bread, pressing gently around the edges to seal.
- Whisk together milk, sugar, vanilla, and eggs in a shallow dish until blended. Dip sandwiches in egg mixture; soak 30 seconds per side.
- Heat a large griddle or large nonstick skillet coated with cooking spray over medium-high heat.
- Add sandwiches to skillet; cook 2 minutes per side or until lightly browned. Top with Mango-Coconut Topping recipe.

- 1 mango, cubed
- 1½ Tbsp fresh orange juice
- 1 Tbsp honey
- 2 Tbsp sweetened flaked coconut
Side Dish Instructions
- Combine mango, orange juice, and honey; toss. Gently stir in coconut.
