Lemon-Avocado Penne Primavera
Ingredients
- ½ (16-oz) pkg whole-grain penne pasta
- ½ (12-oz) pkg broccoli florets, coarsely chopped (see Note)
- 1 cup shredded carrots
- ½ red onion, sliced
- ½ pint grape tomatoes, halved
- 1 lemon
- 1 avocado, chopped
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup vegan shredded Parmesan cheese
Instructions
- Cook pasta according to package directions, reserving ¼ cup pasta water.
- Meanwhile, cook broccoli, carrots, and onion in a large skillet coated with cooking spray over medium-high heat 5 to 6 minutes or until tender. Add tomatoes; cook 5 minutes.
- Grate zest and squeeze juice from lemon. Toss pasta, avocado, lemon zest, lemon juice, desired amount of pasta water, salt, and pepper with vegetable mixture until blended. Sprinkle with cheese.
