Ingredients
- ⅓ cup olive oil
- ¼ cup Champagne vinegar (or use white wine vinegar)
- 1 Tbsp Dijon mustard
- 3 cups shredded rotisserie chicken
- 1 (12-oz) jar roasted red peppers, drained and chopped
- 1 (2.25-oz) can sliced black olives, drained
- 1 cup chopped celery
- ½ cup thinly sliced fresh basil
- ⅓ cup chopped green onion
- 1 (3-count) pkg romaine lettuce hearts, separated into leaves
Instructions
- Whisk together oil, vinegar, and mustard in a large bowl. Add chicken, peppers, olives, celery, basil, and green onion; toss.
- Serve in lettuce leaves.

- 2 Tbsp honey
