Ingredients

  • ¼ cup reduced-fat olive oil mayonnaise
  • 1 Tbsp chopped roasted red pepper
  • 1 Tbsp chopped fresh basil (optional)
  • 1 tsp lemon juice
  • ½ tsp pepper
  • ¾ lb low-sodium roasted turkey breast slices
  • 1 cup arugula
  • 1 small cucumber, cut into thin sticks
  • ½ cup shredded carrots

Instructions

  1. Combine mayonnaise, red pepper, basil, if using, lemon juice, and pepper.
  2. Arrange turkey in 8 stacks. Top each with mayonnaise spread, arugula, cucumber, and carrot.
  3. Roll up; secure with wooden picks.
