Turkey-Veggie Roll-Ups with Red Pepper Mayo
Whole Wheat Crackers and PlumsIngredients
- ¼ cup reduced-fat olive oil mayonnaise
- 1 Tbsp chopped roasted red pepper
- 1 Tbsp chopped fresh basil (optional)
- 1 tsp lemon juice
- ½ tsp pepper
- ¾ lb low-sodium roasted turkey breast slices
- 1 cup arugula
- 1 small cucumber, cut into thin sticks
- ½ cup shredded carrots
Instructions
- Combine mayonnaise, red pepper, basil, if using, lemon juice, and pepper.
- Arrange turkey in 8 stacks. Top each with mayonnaise spread, arugula, cucumber, and carrot.
- Roll up; secure with wooden picks.
