French Fry Taco Pie

Ingredients

  • 1 (28-oz) pkg frozen steak-cut French fries, thawed
  • 1 (1-oz) envelope taco seasoning mix, divided
  • 1 lb ground beef
  • ½ cup chopped onion
  • 1 cup fresh salsa
  • 1 (8-oz) pkg shredded Cheddar cheese, divided
  • ½ (8-oz) pkg shredded lettuce
  • 1 Roma tomato, sliced
  • ¼ cup sour cream

Instructions

  1. Preheat oven to 400°F. Toss fries with 2 Tbsp taco seasoning. Press fries in bottom and up sides of a lightly greased 10-inch pie plate. Bake 25 minutes or until lightly browned.
  2. Meanwhile, cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Stir in salsa and remaining taco seasoning. Cook until thoroughly heated. Stir in 1 cup cheese; spoon mixture over baked French fry crust.
  3. Bake 20 minutes or until crust is golden brown. Sprinkle with 1 cup cheese, and bake 5 minutes longer. Cool 5 minutes.
  4. Top with lettuce and tomato. Cut into wedges, and serve with sour cream.

  • ½ pineapple, peeled and cored
  • 2 Tbsp butter

Side Dish Instructions

  1. Cut pineapple into 1-inch rings; pat dry with paper towels.
  2. Melt butter in a large skillet over medium-high heat; add pineapple, and cook 3 to 4 minutes per side or until browned.
