French Fry Taco Pie
Caramelized PineappleIngredients
- 1 (28-oz) pkg frozen steak-cut French fries, thawed
- 1 (1-oz) envelope taco seasoning mix, divided
- 1 lb ground beef
- ½ cup chopped onion
- 1 cup fresh salsa
- 1 (8-oz) pkg shredded Cheddar cheese, divided
- ½ (8-oz) pkg shredded lettuce
- 1 Roma tomato, sliced
- ¼ cup sour cream
Instructions
- Preheat oven to 400°F. Toss fries with 2 Tbsp taco seasoning. Press fries in bottom and up sides of a lightly greased 10-inch pie plate. Bake 25 minutes or until lightly browned.
- Meanwhile, cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Stir in salsa and remaining taco seasoning. Cook until thoroughly heated. Stir in 1 cup cheese; spoon mixture over baked French fry crust.
- Bake 20 minutes or until crust is golden brown. Sprinkle with 1 cup cheese, and bake 5 minutes longer. Cool 5 minutes.
- Top with lettuce and tomato. Cut into wedges, and serve with sour cream.

- ½ pineapple, peeled and cored
- 2 Tbsp butter

- Cut pineapple into 1-inch rings; pat dry with paper towels.
- Melt butter in a large skillet over medium-high heat; add pineapple, and cook 3 to 4 minutes per side or until browned.
