Stuffed Pepper Bowls

Ingredients

  • ¾ cup long-grain white rice
  • ¾ lb ground beef
  • 1 (8-oz) can tomato sauce
  • 1 Tbsp Worcestershire sauce
  • ½ (20-oz) pkg frozen bell pepper and onion strips
  • 1 cup grape tomatoes, halved
  • ¼ cup sour cream

Instructions

  1. Cook rice according to package directions; season with salt and pepper to taste.
  2. Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in tomato sauce and Worcestershire sauce; cook until thoroughly heated. Season with salt and pepper to taste.
  3. Microwave bell pepper and onion according to package directions.
  4. Divide rice between 2 shallow bowls. Top with meat mixture, bell pepper mixture, and tomatoes. Dollop with sour cream.

Side Dish Ingredients

  • ½ cantaloupe, cut into wedges

Side Dish Instructions

  1. Serve cantaloupe on the side.
