Stuffed Pepper Bowls
Sliced Melon
Ingredients
- ¾ cup long-grain white rice
- ¾ lb ground beef
- 1 (8-oz) can tomato sauce
- 1 Tbsp Worcestershire sauce
- ½ (20-oz) pkg frozen bell pepper and onion strips
- 1 cup grape tomatoes, halved
- ¼ cup sour cream
Instructions
- Cook rice according to package directions; season with salt and pepper to taste.
- Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in tomato sauce and Worcestershire sauce; cook until thoroughly heated. Season with salt and pepper to taste.
- Microwave bell pepper and onion according to package directions.
- Divide rice between 2 shallow bowls. Top with meat mixture, bell pepper mixture, and tomatoes. Dollop with sour cream.
Side Dish Ingredients
- ½ cantaloupe, cut into wedges

- Serve cantaloupe on the side.
