Corn Dog Casserole

Ingredients

  • 2 Tbsp butter
  • 1 (10-count) pkg hot dogs, sliced
  • 1 (15-oz) box honey cornbread and muffin mix
  • 1 cup milk
  • ⅔ cup vegetable oil
  • 2 large eggs
  • 1 (8-oz) pkg shredded Cheddar cheese, divided
  • 1½ cups frozen yellow corn, thawed

Instructions

  1. Preheat oven to 400°F. Melt butter in a large skillet over medium-high heat. Add hot dogs, and cook 5 to 6 minutes or until browned.
  2. Meanwhile, stir together cornbread mix, milk, oil, eggs, 1 cup cheese, corn, and hot dogs in a large bowl. Spoon into a lightly greased 3 quart baking dish, sprinkle with 1 cup cheese.
  3. Bake 30 to 40 minutes or until center is set.

Side Dish Ingredients

  • 1 (16-oz) peeled and cored pineapple, cubed
  • 3 cups seedless green grapes
  • 2 apples, chopped

Side Dish Instructions

  1. Combine all ingredients in a serving bowl.
