Blue Cheese Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 Tbsp olive oil
  • 3 Tbsp whole buttermilk
  • 2 Tbsp sour cream
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • ½ tsp dry mustard
  • ⅔ cup crumbled blue cheese (3 oz)

Instructions

  1. Sprinkle chicken with ½ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Meanwhile, whisk together buttermilk, sour cream, garlic, lemon juice, mustard, and ¼ tsp each salt and pepper. Fold in cheese. Serve sauce with chicken.

  • 3 large eggs
  • 4 slices center cut bacon, chopped
  • 1 (10-oz) pkg chopped romaine lettuce
  • 2 tomatoes, cut into wedges
  • 2 avocados, sliced
  • ½ cup red wine vinaigrette

Side Dish Instructions

  1. Place eggs in a single layer in a large saucepan. Add water to cover; bring a boil. Remove from heat; let stand, covered, 15 minutes. Drain and run cold water over eggs; peel and chop.
  2. Meanwhile, cook bacon in a skillet over medium heat 6 minutes or until crisp.
  3. Divide lettuce among 6 plates. Top with tomatoes, avocados, eggs, and bacon; drizzle with vinaigrette.
