Red Pepper-Chicken Pasta

Ingredients

  • 2 (9-oz) pkg refrigerated fettuccine
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 1 (12-oz) jar sliced roasted red peppers, chopped
  • 3 cups chopped rotisserie chicken
  • 1 (24-oz) jar marinara sauce
  • 1 (5-oz) pkg spinach
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned. Add peppers; cook 2 minutes.
  3. Add chicken, sauce, and gradually stir in spinach; reduce heat to medium, and cook 3 minutes or until thoroughly heated and spinach wilts. Serve over pasta; sprinkle with cheese.
