Red Pepper-Chicken Pasta
Ingredients
- 2 (9-oz) pkg refrigerated fettuccine
- 1 onion, chopped
- 2 Tbsp olive oil
- 1 (12-oz) jar sliced roasted red peppers, chopped
- 3 cups chopped rotisserie chicken
- 1 (24-oz) jar marinara sauce
- 1 (5-oz) pkg spinach
- ¾ cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned. Add peppers; cook 2 minutes.
- Add chicken, sauce, and gradually stir in spinach; reduce heat to medium, and cook 3 minutes or until thoroughly heated and spinach wilts. Serve over pasta; sprinkle with cheese.
