Chimichurri Pork Chops
Mashed Potatoes and Tomato-Walnut Salad

Ingredients
- 2 lb boneless pork chops
- ½ tsp salt
- ½ tsp pepper
- ¼ cup olive oil, divided
- ½ cup packed fresh parsley leaves
- 3 Tbsp chopped fresh cilantro
- 3 Tbsp white wine vinegar
- ¼ tsp ground cumin
- ¼ tsp honey
- 2 cloves garlic, halved
- ⅛ tsp cayenne pepper (optional)
Instructions
- Sprinkle pork with salt and pepper. Cook pork in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done.
- Meanwhile, process parsley, cilantro, 3 Tbsp oil, vinegar, cumin, honey, garlic, and, if desired, cayenne pepper in a food processor or blender until finely chopped. Serve sauce with pork.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 2 (5-oz) pkg spring mix
- 1 pint grape tomatoes
- ½ cup chopped walnuts
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Heat potatoes according to package directions.
- Toss together greens, tomatoes, nuts, and vinaigrette in a large bowl.
