Ingredients
- 2 (3.5-oz) pouches boil-in-bag brown rice
- 1 (20-oz) pkg frozen pepper and onion blend
- 2 limes
- 2 (16-oz) cans fat-free refried beans
- ½ cup chopped fresh cilantro
- 6 burrito-size flour tortillas
- 2 avocados, cubed
- ¾ cup fresh salsa
Instructions
- Cook rice and vegetables according to package directions.
- Meanwhile, grate 1 tsp zest and squeeze juice from limes into a large bowl. Add beans and cilantro, and stir together.
- Divide rice, bean mixture, and vegetables among tortillas. Top with avocado. Fold in sides of tortillas; roll up to completely enclose filling. Serve with salsa.
