Ingredients

  • 2 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (20-oz) pkg frozen pepper and onion blend
  • 2 limes
  • 2 (16-oz) cans fat-free refried beans
  • ½ cup chopped fresh cilantro
  • 6 burrito-size flour tortillas
  • 2 avocados, cubed
  • ¾ cup fresh salsa

Instructions

  1. Cook rice and vegetables according to package directions.
  2. Meanwhile, grate 1 tsp zest and squeeze juice from limes into a large bowl. Add beans and cilantro, and stir together.
  3. Divide rice, bean mixture, and vegetables among tortillas. Top with avocado. Fold in sides of tortillas; roll up to completely enclose filling. Serve with salsa.
