Beef with Mushroom Gravy

Ingredients
- 1½ lb skirt steak (or use flank steak or London broil)
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 onion, chopped
- 1 (16-oz) pkg sliced mushrooms
- 2 Tbsp olive oil
- 1 Tbsp minced garlic
- 1½ cups low-sodium chicken broth
- 1 Tbsp all-purpose flour
Instructions
- Preheat broiler. Sprinkle steak with ¼ tsp each salt and pepper. Broil 4 to 6 minutes per side or to desired doneness. Let stand 5 to 10 minutes before slicing across the grain.
- Meanwhile, cook onion and mushrooms in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender. Add garlic and ¼ tsp each salt and pepper; cook 1 minute or until fragrant.
- Stir in broth and flour; reduce heat to medium, and cook 4 minutes or until thickened. Serve gravy with steak.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 6 cups spring mix
- 1½ cups shredded carrots
- 1 English cucumber, sliced
- ½ cup olive oil vinaigrette
Side Dish Instructions
- Cook potatoes according to package directions.
- Toss together lettuce, carrots, cucumber, and vinaigrette in a large bowl.
