Ranch Chicken Tenders
Apple-Walnut Spinach Salad
Ingredients
- 2 cups panko breadcrumbs
- 1 (1-oz) envelope Ranch dressing mix
- ½ cup all-purpose flour
- 3 large eggs
- 2 lb chicken tenderloins (see Note)
- ¾ cup Ranch dressing
Instructions
- Preheat oven to 400°F. Coat a large rimmed baking sheet with cooking spray.
- Combine panko and Ranch mix in a shallow bowl. Place flour in a second bowl. Beat eggs lightly in a third bowl.
- Dip chicken in flour, then dip in egg mixture, letting excess drip off. Dredge chicken in panko mixture, pressing to adhere. Place coated chicken on a prepared baking sheet. Coat chicken with cooking spray.
- Bake 15 minutes or until chicken is done. Serve with Ranch dressing for dipping.
Side Dish Ingredients
- 1 (10-oz) pkg spinach
- 3 Honeycrisp apples, sliced
- ⅓ cup chopped walnuts
- ⅓ cup Champagne vinaigrette (or use olive oil vinaigrette)
Side Dish Instructions
- Toss together all ingredients in a large bowl.
