Ranch Chicken Tenders

Apple-Walnut Spinach Salad

Ingredients

  • 2 cups panko breadcrumbs
  • 1 (1-oz) envelope Ranch dressing mix
  • ½ cup all-purpose flour
  • 3 large eggs
  • 2 lb chicken tenderloins (see Note)
  • ¾ cup Ranch dressing

Instructions

  1. Preheat oven to 400°F. Coat a large rimmed baking sheet with cooking spray.
  2. Combine panko and Ranch mix in a shallow bowl. Place flour in a second bowl. Beat eggs lightly in a third bowl.
  3. Dip chicken in flour, then dip in egg mixture, letting excess drip off. Dredge chicken in panko mixture, pressing to adhere. Place coated chicken on a prepared baking sheet. Coat chicken with cooking spray.
  4. Bake 15 minutes or until chicken is done. Serve with Ranch dressing for dipping.

Side Dish Ingredients

  • 1 (10-oz) pkg spinach
  • 3 Honeycrisp apples, sliced
  • ⅓ cup chopped walnuts
  • ⅓ cup Champagne vinaigrette (or use olive oil vinaigrette)

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
