Pesto Vegetable French Bread Pizza

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 red or yellow bell peppers, sliced
  • 1 red onion, thinly sliced
  • 1 Tbsp olive oil
  • 1 (14-oz) loaf French bread
  • 1 cup pesto
  • 1 (8-oz) pkg shredded Italian-blend cheese 
  • 1 cup whole-milk ricotta cheese

Instructions

  1. Preheat broiler. Cook broccoli according to package directions. Cut any large florets into smaller pieces.
  2. Meanwhile, cook bell peppers and onion in hot oil over medium-high heat 6 minutes or until lightly browned and tender.
  3. Cut bread in half lengthwise. Spread pesto on cut sides of bread; top with Italian-blend cheese and vegetables. Dollop ricotta over vegetables. Broil 2 to 3 minutes or until toasted and cheese melts. Cut into serving-size pieces.
