Pesto Vegetable French Bread Pizza

Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 red or yellow bell peppers, sliced
- 1 red onion, thinly sliced
- 1 Tbsp olive oil
- 1 (14-oz) loaf French bread
- 1 cup pesto
- 1 (8-oz) pkg shredded Italian-blend cheese
- 1 cup whole-milk ricotta cheese
Instructions
- Preheat broiler. Cook broccoli according to package directions. Cut any large florets into smaller pieces.
- Meanwhile, cook bell peppers and onion in hot oil over medium-high heat 6 minutes or until lightly browned and tender.
- Cut bread in half lengthwise. Spread pesto on cut sides of bread; top with Italian-blend cheese and vegetables. Dollop ricotta over vegetables. Broil 2 to 3 minutes or until toasted and cheese melts. Cut into serving-size pieces.
