Honey-Garlic Shrimp

Ingredients
- 2 lb peeled and deveined, large raw shrimp
- 1 Tbsp olive oil
- ⅓ cup honey
- ¼ cup low-sodium soy sauce
- 3 cloves garlic, minced
Instructions
- Cook shrimp in hot oil in a large skillet over medium-high heat 2 minutes.
- Add honey, soy sauce, and garlic to skillet; cook 2 minutes or until shrimp turn pink and sauce is thickened.
Side Dish Ingredients
- 2 (3.5-oz) pkg boil-in-bag brown rice
- 1 (12-oz) pkg frozen shelled edamame
- 1 onion, chopped
- ½ tsp garlic powder
- 2 Tbsp olive oil
- 3 large eggs, lightly beaten
- 3 Tbsp low-sodium soy sauce
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook edamame, onion, and garlic powder in hot oil in a large skillet over medium-high heat 6 minutes or until tender. Add rice; cook 2 minutes.
- Push mixture to side of skillet. Add beaten eggs to center of skillet; cook, stirring constantly, until scrambled. Combine eggs with rice mixture; stir in soy sauce.
