Creamy Avocado Pasta
Italian Romaine SaladIngredients
- 6 oz whole-grain rotini pasta (1½ cups)
- 1 avocado, coarsely chopped
- 1½ Tbsp lemon juice
- 1 clove garlic
- ½ cup freshly grated Parmesan cheese, divided
Instructions
- Cook pasta in a large saucepan according to package directions; drain, reserving ¼ cup pasta water.
- Process avocados, lemon juice, and garlic in a food processor until smooth, scraping sides as needed.
- Cook avocado mixture, pasta, ¼ cup cheese, and enough pasta water to make a thin sauce in saucepan over medium-low heat 5 minutes until combined and sauce is slightly thickened.
- Serve sprinkled with remaining ¼ cup cheese.

- 1 (9-oz) pkg chopped romaine lettuce
- ¼ cup sliced English cucumber
- ½ cup grape tomatoes, halved
- ¼ cup olive oil vinaigrette
- ¼ cup freshly grated Parmesan cheese

- Toss together all ingredients in a serving bowl.
