Ingredients

  • 2 onions, thinly sliced
  • 2 Tbsp butter, melted
  • 1 (32-oz) pkg frozen fully cooked homestyle meatballs
  • ⅓ cup beef broth
  • 1 (6-count) pkg hoagie rolls
  • 12 slices provolone cheese

Instructions

  1. Cook onions with a pinch of sugar in melted butter, covered, in a large deep skillet over medium heat 10 minutes, stirring occasionally. Uncover, increase heat to medium-high, and cook 5 minutes or until browned and tender. Season with salt and pepper.
  2. Meanwhile, heat 30 meatballs according to package directions for microwave. Add broth and meatballs to skillet with onions, tossing to coat.
  3. Preheat broiler. Toast rolls, cut sides up, on a baking sheet. Add meatballs with onions to bottom rolls, and top with cheese. Broil 1 to 2 minutes or until cheese melts. Add tops.

  • 3 large tomatoes (assorted colors)
  • Olive oil

Side Dish Instructions

  1. Slice tomatoes; arrange on a platter. Drizzle with oil; sprinkle with kosher salt and pepper to taste.
