Ingredients

  • 6 thin sliced boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup butter
  • ½ cup roasted, salted cashews

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done; remove from skillet.
  2. Melt butter in skillet; add nuts, and cook 3 minutes or until toasted. Serve sauce with chicken.

  • ¼ cup chopped onion
  • 2 tsp olive oil
  • 2 (10-oz) pkg frozen riced broccoli 
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp butter
  • ¾ cup shredded Cheddar cheese

Side Dish Instructions

  1. Cook onion in hot oil in a large skillet over medium heat 2 to 3 minutes or until tender.
  2. Stir in broccoli, salt, and pepper. Cook 8 to 10 minutes or until tender.
  3. Stir in butter and cheese; reduce heat, and cook 2 minutes or until cheese melts.
