Ingredients
- 6 thin sliced boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¼ cup butter
- ½ cup roasted, salted cashews
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done; remove from skillet.
- Melt butter in skillet; add nuts, and cook 3 minutes or until toasted. Serve sauce with chicken.

- ¼ cup chopped onion
- 2 tsp olive oil
- 2 (10-oz) pkg frozen riced broccoli
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp butter
- ¾ cup shredded Cheddar cheese
Side Dish Instructions
- Cook onion in hot oil in a large skillet over medium heat 2 to 3 minutes or until tender.
- Stir in broccoli, salt, and pepper. Cook 8 to 10 minutes or until tender.
- Stir in butter and cheese; reduce heat, and cook 2 minutes or until cheese melts.
