Beef Burrito Salad Bowls

Ingredients
- 1½ lb ground beef (or use ground turkey)
- 1 (8-oz) pkg chopped onion
- 1 (1-oz) envelope fajita seasoning
- ½ (16-oz) jar salsa
- 2 (8.8-oz) pouches microwavable brown rice
- 1 (15-oz) can pinto beans, drained and rinsed
- 1 (8-oz pkg) shredded iceberg lettuce
- 1 (8-oz) pkg shredded Mexican-blend cheese
- 1 (13-oz) pkg tortilla chips
Instructions
- Cook beef and onion in a large nonstick skillet over medium-high heat until browned and crumbly. Drain, return to skillet, and add seasoning and ¼ cup water. Simmer 1 to 2 minutes. Stir in salsa.
- Cook rice according to package directions. Toss together beans and rice; season with salt and pepper.
- Arrange shredded lettuce, beef mixture, rice and beans in each bowl. Top with cheese, coarsely crushed chips, and other favorite toppings.
