Garlic Butter Grilled Salmon

Ingredients

  • 1 ( 1½-lb) salmon fillet, patted dry
  • 1 tsp kosher salt
  • ½ tsp freshly ground pepper
  • ¼ cup butter, softened
  • 1½ Tbsp minced garlic
  • 2 Tbsp finely chopped fresh parsley

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle fish with salt and pepper.
  2. Grill fish, skin sides down, 3 minutes. Turn fish over, and grill 2 minutes longer or until flakes with a fork. Cut fillet into serving-size pieces. Combine butter, garlic, and parsley; spread on fish before serving.

Side Dish Ingredients

  • 1½ lb Honey Gold potatoes, quartered
  • ¼ cup water
  • 1½ lb Broccolini, cut into pieces
  • 1 cup freshly grated Parmesan cheese
  • ½ cup olive oil vinaigrette
  • ¼ cup chopped fresh parsley
  • 2 tsp Italian seasoning

Side Dish Instructions

  1. Place potatoes and water in a microwave-safe bowl; cover with plastic wrap, and vent. Microwave at HIGH 6 minutes.
  2. Add Broccolini to potatoes; cover and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
  3. Gently toss potatoes and Broccolini with remaining ingredients in a large bowl. Season with salt and pepper.
