Garlic Butter Grilled Salmon

Ingredients
- 1 ( 1½-lb) salmon fillet, patted dry
- 1 tsp kosher salt
- ½ tsp freshly ground pepper
- ¼ cup butter, softened
- 1½ Tbsp minced garlic
- 2 Tbsp finely chopped fresh parsley
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle fish with salt and pepper.
- Grill fish, skin sides down, 3 minutes. Turn fish over, and grill 2 minutes longer or until flakes with a fork. Cut fillet into serving-size pieces. Combine butter, garlic, and parsley; spread on fish before serving.
Side Dish Ingredients
- 1½ lb Honey Gold potatoes, quartered
- ¼ cup water
- 1½ lb Broccolini, cut into pieces
- 1 cup freshly grated Parmesan cheese
- ½ cup olive oil vinaigrette
- ¼ cup chopped fresh parsley
- 2 tsp Italian seasoning
Side Dish Instructions
- Place potatoes and water in a microwave-safe bowl; cover with plastic wrap, and vent. Microwave at HIGH 6 minutes.
- Add Broccolini to potatoes; cover and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
- Gently toss potatoes and Broccolini with remaining ingredients in a large bowl. Season with salt and pepper.
