Colorful Steak Salad

Ingredients

  • 2 (6-oz) pkg frozen fully cooked beef steak
  • 2 (10-oz) pkg frozen roasted corn
  • 2 pints assorted color grape tomatoes, halved (or cherry tomatoes)
  • ½ red onion, thinly sliced
  • ⅓ cup fresh basil leaves
  • ¼ cup olive oil
  • ⅓ cup bottled lime juice
  • 1 Tbsp minced garlic
  • ½ tsp crushed red pepper
  • 2 avocados, chopped

Instructions

  1. Reheat steak strips using package directions for skillet, about 6 minutes.
  2. Cook corn according to package directions. Toss together corn, tomatoes, onion, and basil in a large bowl.
  3. Whisk together oil, lime juice, garlic, and red pepper. Pour over corn mixture; season with salt. Add steak; toss. Season again with salt and pepper. Gently stir in avocado.

Side Dish Ingredients

  • 1 (13-oz) pkg tortilla chips
  • 1 (16-oz) container fresh salsa

Side Dish Instructions

  1. Serve chips and salsa on the table. Crush some tortilla chips on each salad, if desired.
