Colorful Steak Salad
Tortilla ChipsIngredients
- 2 (6-oz) pkg frozen fully cooked beef steak
- 2 (10-oz) pkg frozen roasted corn
- 2 pints assorted color grape tomatoes, halved (or cherry tomatoes)
- ½ red onion, thinly sliced
- ⅓ cup fresh basil leaves
- ¼ cup olive oil
- ⅓ cup bottled lime juice
- 1 Tbsp minced garlic
- ½ tsp crushed red pepper
- 2 avocados, chopped
Instructions
- Reheat steak strips using package directions for skillet, about 6 minutes.
- Cook corn according to package directions. Toss together corn, tomatoes, onion, and basil in a large bowl.
- Whisk together oil, lime juice, garlic, and red pepper. Pour over corn mixture; season with salt. Add steak; toss. Season again with salt and pepper. Gently stir in avocado.
Side Dish Ingredients
- 1 (13-oz) pkg tortilla chips
- 1 (16-oz) container fresh salsa
Side Dish Instructions
- Serve chips and salsa on the table. Crush some tortilla chips on each salad, if desired.
