Creamy Everything Chicken
Caesar Salad with Lemon Vinaigrette and Cauliflower Rice

Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ½ cup chopped onion
- 1 (8-oz) block cream cheese, cut up and softened
- ¾ cup chicken broth
- 1½ Tbsp everything bagel seasoning
Instructions
- Sprinkle chicken lightly with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 minutes. Turn chicken, and add onion to skillet; cook 5 minutes or until onion is browned and chicken is done. Remove chicken to a plate; keep warm.
- Add cream cheese and broth to skillet; cook 3 minutes or until thoroughly heated. Spoon sauce over chicken. Sprinkle with bagel seasoning. Serve over cauliflower rice.

- 1 (20-oz) pkg frozen riced cauliflower
- 2 (10-oz) pkg chopped romaine lettuce
- ½ cup (or more) refrigerated lemon vinaigrette
- 1 cup freshly shredded Parmesan cheese
Side Dish Instructions
- Cook cauliflower according to package directions. Season with salt and pepper to taste.
- Toss together lettuce, vinaigrette, and cheese in a large bowl until blended. Season with salt and pepper to taste.
