Sheet Pan Southwest Sausage and Potatoes

Ingredients
- 1½ lb small red potatoes, halved
- 3 Tbsp olive oil, divided
- ¾ tsp ground cumin, divided
- ½ tsp chili powder, divided
- ½ tsp pepper, divided
- 1 (14-oz) pkg smoked sausage, sliced
- 1½ cups corn kernels (from 3 ears; see Note)
- 1 red bell pepper, sliced
- ¾ cup sour cream
- ½ cup chopped green onions
Instructions
- Preheat oven to 425°F. Toss together potatoes, 1 Tbsp oil, and ¼ tsp each cumin, chili powder, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 10 minutes.
- Meanwhile, toss together sausage, corn, bell pepper, 2 Tbsp oil, ½ tsp cumin, and ¼ tsp each chili powder and pepper on a second large rimmed baking sheet; spread in a single layer.
- Add pan to oven; roast 15 minutes or until potatoes are browned and tender. Top each serving with sour cream and green onions.
