One-Pot Cheeseburger Gnocchi
Ranch Wedge SaladIngredients
- 2 Tbsp butter
- 1 (16-oz) pkg gnocchi
- 1 lb ground beef
- ½ cup chopped onion
- 1 (14.5-oz) can diced tomatoes, drained
- 1 (10.5-oz) can cream of celery soup
- ¾ cup low-sodium chicken broth
- 1 Tbsp Worcestershire sauce
- 1 (8-oz) pkg shredded Cheddar cheese
Instructions
- Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
- Cook beef and onion in same skillet over medium heat 8 minutes or until beef is browned and crumbly; drain and return to skillet.
- Stir in tomatoes, soup, broth, Worcestershire, and gnocchi. Bring to a boil; reduce heat, cover and simmer 10 minutes or until gnocchi is tender. Stir in cheese.
Side Dish Ingredients
- 1 head iceberg lettuce
- ¾ cup Ranch dressing
- 3 Roma tomatoes, chopped
- ½ cup chopped red onion
- ½ tsp pepper
Side Dish Instructions
- Cut lettuce into 6 wedges, and divide among 6 plates. Drizzle with dressing; sprinkle with tomatoes, onion, and pepper.
