Ingredients

  • 1 small zucchini, halved lengthwise
  • 1 small red bell pepper, halved
  • 1 Tbsp olive oil
  • ¾ cup marinara sauce
  • ½ (6-count) pkg pita bread rounds
  • 1 cup shredded mozzarella cheese
  • ½ small red onion, thinly sliced
  • ½ cup pitted kalamata olives, halved
  • ½ cup crumbled feta cheese
  • ⅓ cup chopped fresh basil

Instructions

  1. Preheat grill to medium-high heat. Toss zucchini and bell pepper with oil. Grill, covered, 4 to 5 minutes or until tender.
  2. Cut zucchini in ¼-inch slices and bell pepper into strips.
  3. Spread marinara sauce on pita rounds; top with mozzarella, onion, olives, grilled vegetables, and feta.
  4. Grill, covered, 2 to 3 minutes or until cheese is melted and pitas are crisp. Sprinkle with basil.

Side Dish Ingredients

  • ½ small seedless watermelon, chilled

Side Dish Instructions

  1. Cut up watermelon into wedges.
