Hawaiian Pork Loin

Ingredients

  • 1½ lb boneless pork loin
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (20-oz) can pineapple chunks in juice, drained
  • 1 (8-oz) can tomato sauce
  • 2 Tbsp fresh orange juice
  • 1 tsp dried thyme

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet 6 to 8 minutes or until browned on on all sides. Transfer to a greased 5- to 6-quart slow cooker; top with onion, bell pepper, and pineapple.
  2. Stir together tomato sauce, orange juice, and thyme; pour over pork.
  3. Cover and cook on LOW 6 to 7 hours or until pork is done.

Side Dish Ingredients

  • 1½ cups uncooked long-grain rice
  • 2 (15-oz) cans black beans, drained and rinsed
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp olive oil
  • 2 green onions, thinly sliced
  • 1 tsp onion powder
  • ½ tsp garlic powder

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Stir together beans and remaining ingredients in a large saucepan over medium heat; cook 4 minutes or until thoroughly heated. Stir in rice.
