Hawaiian Pork Loin
Black Beans and RiceIngredients
- 1½ lb boneless pork loin
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 (20-oz) can pineapple chunks in juice, drained
- 1 (8-oz) can tomato sauce
- 2 Tbsp fresh orange juice
- 1 tsp dried thyme
Instructions
- Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet 6 to 8 minutes or until browned on on all sides. Transfer to a greased 5- to 6-quart slow cooker; top with onion, bell pepper, and pineapple.
- Stir together tomato sauce, orange juice, and thyme; pour over pork.
- Cover and cook on LOW 6 to 7 hours or until pork is done.
Side Dish Ingredients
- 1½ cups uncooked long-grain rice
- 2 (15-oz) cans black beans, drained and rinsed
- ¼ cup low-sodium chicken broth
- 1 Tbsp olive oil
- 2 green onions, thinly sliced
- 1 tsp onion powder
- ½ tsp garlic powder
Side Dish Instructions
- Cook rice according to package directions.
- Stir together beans and remaining ingredients in a large saucepan over medium heat; cook 4 minutes or until thoroughly heated. Stir in rice.
