London Broil and Mushrooms
Herbed Green Beans and Roasted PotatoesIngredients
- 1½ lb boneless London broil steak, trimmed (or use boneless top sirloin or flank steak)
- 1 Tbsp Montreal seasoning
- 1 onion, chopped
- 1 (16-oz) pkg whole baby bella mushrooms
- 1 (14.5-oz) can low-sodium beef broth
- 2 Tbsp Worcestershire sauce
- 1 Tbsp olive oil
- 1 tsp dried thyme
Instructions
- Sprinkle steak with seasoning, and place in a 5- to 6-quart slow cooker. Top with onion and mushrooms.
- Stir together broth, Worcestershire sauce, oil, and thyme; pour into slow cooker.
- Cover and cook on LOW 6 hours or until beef is tender.
Side Dish Ingredients
- 2 (22-oz) pkg frozen roasted red potatoes
- 2 (12-oz) pkg fresh steam-in-bag green beans
- ½ cup chopped onion
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 1 Tbsp sliced fresh basil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Bake potatoes according to package directions. Steam green beans according to package directions.
- Sauté onion in hot oil in a large nonstick skillet 3 to 4 minutes or until tender. Add green beans, lemon juice, basil, salt, and pepper, and toss.
