London Broil and Mushrooms

Herbed Green Beans and Roasted Potatoes

Ingredients

  • 1½ lb boneless London broil steak, trimmed (or use boneless top sirloin or flank steak)
  • 1 Tbsp Montreal seasoning
  • 1 onion, chopped
  • 1 (16-oz) pkg whole baby bella mushrooms
  • 1 (14.5-oz) can low-sodium beef broth
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp olive oil
  • 1 tsp dried thyme

Instructions

  1. Sprinkle steak with seasoning, and place in a 5- to 6-quart slow cooker. Top with onion and mushrooms.
  2. Stir together broth, Worcestershire sauce, oil, and thyme; pour into slow cooker.
  3. Cover and cook on LOW 6 hours or until beef is tender.

Side Dish Ingredients

  • 2 (22-oz) pkg frozen roasted red potatoes
  • 2 (12-oz) pkg fresh steam-in-bag green beans
  • ½ cup chopped onion
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 Tbsp sliced fresh basil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bake potatoes according to package directions. Steam green beans according to package directions.
  2. Sauté onion in hot oil in a large nonstick skillet 3 to 4 minutes or until tender. Add green beans, lemon juice, basil, salt, and pepper, and toss.
