Crunchy Chicken Casserole
Yeast Rolls
Ingredients
- 1 cup uncooked long-grain rice
- 2 Tbsp butter
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cups reserved chopped chicken (from Honey-Orange Chicken and Sweet Potatoes recipe)
- 1½ cups shredded sharp Cheddar cheese
- 1 cup mayonnaise
- 1 (10.5-oz) can cream of chicken soup
- 1 (8-oz) can sliced water chestnuts, drained
- 3 cups coarsely crushed ridged potato chips
Instructions
- Preheat oven to 350°F. Cook rice according to package directions.
- Meanwhile, melt butter in a large skillet over medium heat; add onion and bell pepper, and sauté 5 minutes or until tender.
- Stir together chicken, cheese, mayonnaise, soup, water chestnuts, onion mixture, and cooked rice in a large bowl. Spoon mixture into a greased 13- x 9-inch baking dish; sprinkle with crushed potato chips.
- Bake 25 to 35 minutes or until bubbly.
