Crunchy Chicken Casserole

Ingredients

  • 1 cup uncooked long-grain rice
  • 2 Tbsp butter
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cups reserved chopped chicken (from Honey-Orange Chicken and Sweet Potatoes recipe)
  • 1½ cups shredded sharp Cheddar cheese
  • 1 cup mayonnaise
  • 1 (10.5-oz) can cream of chicken soup
  • 1 (8-oz) can sliced water chestnuts, drained
  • 3 cups coarsely crushed ridged potato chips

Instructions

  1. Preheat oven to 350°F. Cook rice according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat; add onion and bell pepper, and sauté 5 minutes or until tender.
  3. Stir together chicken, cheese, mayonnaise, soup, water chestnuts, onion mixture, and cooked rice in a large bowl. Spoon mixture into a greased 13- x 9-inch baking dish; sprinkle with crushed potato chips.
  4. Bake 25 to 35 minutes or until bubbly.
