Barbecue-Cheddar Lettuce Burgers

Ingredients

  • 4 fresh plant-based burger patties
  • ¼ cup barbecue sauce
  • 4 (0.67-oz) slices reduced-fat Cheddar cheese
  • 8 green leaf lettuce leaves
  • ½ cup very thinly sliced red onion

Instructions

  1. Cook patties in a large nonstick skillet over medium-high heat 3 minutes per side.
  2. Reduce heat to medium. Brush with barbecue sauce, and top with cheese. Cover and cook 2 minutes or until done and cheese is melted.
  3. Arrange lettuce in 4 stacks. Serve burgers in lettuce leaves; top with onion.

  • 1 lime, halved
  • ½ peeled and cored pineapple, sliced

Side Dish Instructions

  1. Squeeze lime juice over pineapple slices.
