Turkey Croque Monsieur Sandwiches

Ingredients

  • 2 Tbsp Dijon mustard
  • 1 Tbsp reduced-fat mayonnaise
  • 8 (1-oz) slices whole wheat bread
  • 8 oz deli-sliced low-sodium turkey breast
  • 4 slices reduced-fat Swiss cheese
  • 2 large eggs
  • ¼ cup milk
  • 2 Tbsp light butter with canola oil, divided

Instructions

  1. Stir together mustard and mayonnaise. Spread over 1 side of each bread slice.
  2. Top 4 bread slices with turkey and cheese; cover with 4 bread slices, mustard sides down.
  3. Whisk together eggs and milk in a shallow bowl. Dip sandwiches in egg mixture to coat.
  4. Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add 2 sandwiches to skillet, and cook 3 to 4 minutes per side or until golden brown and cheese is melted. Repeat with remaining butter and sandwiches.

  • 2 cups cubed pineapple
  • 1 (4-oz) cup no-sugar-added mandarin oranges

Side Dish Instructions

  1. Toss together fruit in a serving bowl.
