Turkey Croque Monsieur Sandwiches
Mandarin-Pineapple TossIngredients
- 2 Tbsp Dijon mustard
- 1 Tbsp reduced-fat mayonnaise
- 8 (1-oz) slices whole wheat bread
- 8 oz deli-sliced low-sodium turkey breast
- 4 slices reduced-fat Swiss cheese
- 2 large eggs
- ¼ cup milk
- 2 Tbsp light butter with canola oil, divided
Instructions
- Stir together mustard and mayonnaise. Spread over 1 side of each bread slice.
- Top 4 bread slices with turkey and cheese; cover with 4 bread slices, mustard sides down.
- Whisk together eggs and milk in a shallow bowl. Dip sandwiches in egg mixture to coat.
- Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add 2 sandwiches to skillet, and cook 3 to 4 minutes per side or until golden brown and cheese is melted. Repeat with remaining butter and sandwiches.

- 2 cups cubed pineapple
- 1 (4-oz) cup no-sugar-added mandarin oranges

- Toss together fruit in a serving bowl.
