Creole Pork Chops
Spicy Garlic-Spinach SautéIngredients
- 6 (6-oz) bone-in pork chops
- 1 tsp Creole seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 (8-oz) pkg chopped onion, bell pepper, and celery mix (or use 1 cup frozen seasoning blend)
- 1 pint grape tomatoes
- 2 cloves garlic, minced
- 2 Tbsp chopped fresh parsley
Instructions
- Sprinkle pork with Creole seasoning, salt, and pepper.
- Cook pork, in batches, in hot oil in a large skillet 4 to 5 minutes per side or until done; remove from skillet.
- Sauté onion mix, tomatoes, and garlic in same skillet 5 minutes or until tender. Return pork to skillet. Sprinkle with parsley.
Side Dish Ingredients
- 3 Tbsp butter
- 3 cloves garlic, minced
- 2 (10-oz) pkg baby spinach
- 1 Tbsp hot sauce
Side Dish Instructions
- Melt butter in a large nonstick skillet over medium-high heat. Add garlic; sauté 15 seconds, stirring constantly.
- Gradually add spinach; cook 2 minutes or just until wilted, tossing constantly. Sprinkle with hot sauce.
