Supreme Pizza Mac and Cheese

Ingredients

  • 2 cups milk
  • ¾ cup water
  • 6 oz whole wheat elbow macaroni
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup sliced mushrooms
  • 1 cup halved grape tomatoes
  • ½ cup chopped green bell pepper
  • 1 Tbsp olive oil
  • ½ (5-oz) pkg turkey pepperoni
  • ¾ cup shredded mozzarella cheese

Instructions

  1. Bring milk, water, pasta, salt, and pepper to a simmer in a saucepan over medium heat, stirring occasionally. Reduce heat to low; cook, stirring often, 8 to 10 minutes or until pasta is done and sauce is creamy.
  2. Meanwhile, cook mushrooms, tomatoes, and bell pepper in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until browned. Add pepperoni; cook 2 minutes or until thoroughly heated.
  3. Remove pasta pan from heat. Stir in cheese until melted. Fold in mushroom mixture.
