Supreme Pizza Mac and Cheese

Ingredients
- 2 cups milk
- ¾ cup water
- 6 oz whole wheat elbow macaroni
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup sliced mushrooms
- 1 cup halved grape tomatoes
- ½ cup chopped green bell pepper
- 1 Tbsp olive oil
- ½ (5-oz) pkg turkey pepperoni
- ¾ cup shredded mozzarella cheese
Instructions
- Bring milk, water, pasta, salt, and pepper to a simmer in a saucepan over medium heat, stirring occasionally. Reduce heat to low; cook, stirring often, 8 to 10 minutes or until pasta is done and sauce is creamy.
- Meanwhile, cook mushrooms, tomatoes, and bell pepper in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until browned. Add pepperoni; cook 2 minutes or until thoroughly heated.
- Remove pasta pan from heat. Stir in cheese until melted. Fold in mushroom mixture.
