Ingredients

  • ¾ cup frozen shelled edamame
  • 1 Tbsp low-sodium soy sauce
  • 1½ tsp rice vinegar
  • 1 tsp olive oil
  • ½ tsp Sriracha hot sauce
  • ½ tsp refrigerated ginger paste
  • ½ (10-oz) pkg watermelon spears, cubed
  • 1 large avocado, diced
  • 1 cup sliced English cucumber
  • 1 tsp sesame seeds

Instructions

  1. Cook edamame according to package directions.
  2. Combine soy sauce, vinegar, oil, Sriracha, and ginger paste in a small bowl.
  3. Divide Sesame Brown Rice with Kale recipe between 2 bowls. Top with edamame, watermelon, avocado, and cucumber; drizzle with soy sauce mixture and sprinkle with sesame seeds.

  • 1 (8.8-oz) pouch microwavable brown rice
  • 1 cup thinly sliced lacinato kale
  • 2 tsp low-sodium soy sauce
  • 1 tsp dark sesame oil
