Watermelon Poke Bowls
Sesame Brown Rice with Kale
Ingredients
- ¾ cup frozen shelled edamame
- 1 Tbsp low-sodium soy sauce
- 1½ tsp rice vinegar
- 1 tsp olive oil
- ½ tsp Sriracha hot sauce
- ½ tsp refrigerated ginger paste
- ½ (10-oz) pkg watermelon spears, cubed
- 1 large avocado, diced
- 1 cup sliced English cucumber
- 1 tsp sesame seeds
Instructions
- Cook edamame according to package directions.
- Combine soy sauce, vinegar, oil, Sriracha, and ginger paste in a small bowl.
- Divide Sesame Brown Rice with Kale recipe between 2 bowls. Top with edamame, watermelon, avocado, and cucumber; drizzle with soy sauce mixture and sprinkle with sesame seeds.

- 1 (8.8-oz) pouch microwavable brown rice
- 1 cup thinly sliced lacinato kale
- 2 tsp low-sodium soy sauce
- 1 tsp dark sesame oil
